Place of origin: Our recipe
Simple, quick and tasty autumn-style soup that can be enjoyed throughout the year ;-)
INGREDIENTS (serves 2)
15 g olive oil
500 g butternut squash, cubed
150 g carrot, grated
300 g chicken breast fillet, cut into small
cubes
50 g onion, chopped
600 ml home-made
chicken soup or 1 chicken stock cube + 600 ml water
salt & white pepper
½ tbsp chopped fresh parsley
- Heat oil in a pot, add onions and saute until transparent.
- Add chicken and fry stirring occasionally for couple of minutes (until the liquid from the chicken evaporates).
- Add the squash, stir.
- Add carrots, stir.
- Add the soup (or 600 ml of water and let it boil, then add the chicken stock cube), let boil.
- Add salt, pepper and parsley.
- Reduce the heat and simmer for app. 20 minutes or till the squash is tender.
- Serve in separate bowls and sprinkle with some chopped parsley.
JUHA S BUTTERNUT BUNDEVOM I PILETINOM
Jednostavna, brza i ukusna juha jesenskog "štiha", no prikladna za cijelu godinu ;-)
SASTOJCI (za 2 osobe)
15 g maslinovog ulja (oko 2 žlice)
500 g butternut (putar) bundevom, narezati na kockice
150 g mrkve, naribati
300 g pilećeg filea, narezati na kockice
50 g luka, nasjeckati
500 ml pilećeg temeljca ili 1 pileća kocka + 500 ml vode
sol i bijeli papar
½ žlice sjeckanog svježeg peršina
- U tavi zagrijte ulje, dodajte luk i pirjajte dok luk ne postane staklast.
- Dodajte piletinu i pržite nekoliko minuta uz povremeno miješanje (dok ne ispari tekućina koju je meso pustilo).
- Dodajte bundevu, promiješajte.
- Dodajte mrkvu, promiješajte.
- Dodajte juhu ili 600 ml vode i pustite da zakipi. Dodajte pileću kocku ako ju koristite.
- Dodajte sol, papar i peršinov list.
- Kuhajte na laganoj vatri oko 20 minuta ili dok bundeva ne omekša.
- Poslužite i posipajte svježe sjeckanim peršinovim listom.
