MUM'S APPLE PIE - MAMINA PITA OD JABUKA

Very easy recipe that my mum used to make very often. I think she learned it from my dad's mum, aka from my granny, aka from her mother-in-law. :-) It's different from typical apple pies as you don't have to roll out the dough, actually it doesn't have a dough. It's made of batter and you just have to pour it into a mold. So simple, isn't it? :-)

BATTER:
1 whole egg + 3 egg yolks (use egg whites for something else like meringues or make egg whites omelet)
app 2/3 cup oil
1 cup cake flour
little less than 1 cup milk (app. 200 ml)
1 cup sugar
1 baking powder

FILLING:
1-1.5 kg apples
2 vanilla sugar
raisins (quantity according to your taste)
cinnamon
1 lemon rind, grated
4 tbsp sugar
  1. Beat egg yolks, egg and sugar until well combined, light and fluffy.
  2. Add remaining ingredients and combine thoroughly.
  3. Pour half of mixture into greased and floured rectangle mold.
  4. Heat oven to 200°C and bake till light golden, around 15 minutes (be careful not to overbake!).
  5. In the meantime, peel and grate apples.
  6. Simmer apples with all ingredients for the filling until all juice evaporates.
  7. Pour the filling onto the first half of crust and pour remaining batter over filling.
  8. Bake till light golden, around 15-20 minutes. Test with wooden toothpick. Let cool.
  9. Dust with powdered sugar and cut to small squares.




MAMINA PITA OD JABUKA

Vrlo jednostavna pita koju je mama često radila, mislim da je recept "pokupila" od bake (tatine mame). Nema standardno tijesto koje se valjda već se lijeva pa je brzo gotova kad nemate vremena i/ili volje za valjanje tijesta :-)

TIJESTO
1 cijelo jaje + 3 žumanjka (bjelanjke možete iskoristiti za puslice ili neki drugi desert ili pak napraviti omlet samo od bjelanjaka)
oko 2/3 šalice ulja
1 šalica oštrog brašna
oko 200 ml mlijeka
1 šalica šećera (ili manje, po ukusu)
1 prašak za pecivo

NADJEV:
1-1.5 kg jabuka
2 vanil šećera
grožđice (količina po želji ako ih stavljate)
cimet
ribana korica 1 limuna
4 žlice šećera
  1. Miksati žumanjke, jaje i šećer dok ne postane pjenasto.
  2. Dodati ostale sastojke i dobro izmiksati da se sve sjedini.
  3. Izliti pola tijesta u namašćen i pobrašnjen pravokutni kalup
  4. Ugrijati pećnicu na 200°C i peći dok ne postane svijetle zlatne boje, oko 15 minuta (paziti da se ne prepeče!)
  5. U međuvremenu jabuke oguliti i naribati.
  6. Dinstati jabuke sa svim sastojcima za nadjev dok sav sok (tekućina) ne ispari.
  7. Staviti nadjev na prvi dio tijesta te preliti s preostalim tijestom.
  8. Peći dok ne poprimi svijetlu zlatnu boju, oko 15-20 minuta. Probati  čačkalicom. Ohladiti.
  9. Prije posluživanja posipati šećerom u prahu i narezati na kocke.
