HUSSARS' FRITTERS - HUSARSKI USTIPCI

Another traditional Dalmatian cookie, one of my favorites. It's so simple and easy and yet so delicious and full of flavor. Among the first cookies I've learned how to make while looking at my mum who made them very often and she learned it from her mum long, long time ago while she was still in a high school.
INGREDIENTS:
210 g pastry flour
140 g butter 
70 g sugar
2 egg yolks
egg whites for brushing cookies
  1. In a bowl, knead flour, butter (softened at room temperature), sugar and egg yolks. You can use food processor or hand mixer to make a crumby mass and then finish it with your hands. Or you can do it all with hands. It’s up to you.
  2. Take small pieces of dough, shape them into balls (walnut sized), place them on a parchment paper, make a hole in the middle of each cookie with small finger or upper side of a ladle and brush with egg whites. When making holes, be careful not to make a hole all the way through the cookie!
  3. Heat oven to 160°C and bake for 30 minutes on middle rack until light golden. Let cool. Be careful as warm cookies break easily (cold ones are fragile too!)
  4. Fill holes with apricot or any other fruit marmalade or with melted chocolate or Nutella-type spread.

HUSARSKI UŠTIPCI 

Još jedan tradicionalni dalmatinski kolačić i jedan od meni najdražih. Tako jednostavan, a tako ukusan i pun okusa. Jedan od prvih kolačića koje sam naučila raditi gledajući mamu koja ih je često pekla, a ona je ih pak davno, još kao srednjoškolka, naučila raditi od svoje mame.

SASTOJCI
210 g oštrog brašna
140 g maslaca
70 g šećera
2 žumanjka
bjelanjak za premazivanje
  1. U posudi izmiješati brašno, maslac sobne temperature, šećer i žumanjke. U ovom koraku se može koristiti multipraktik ili mikser s nastavcima za kruh dok se ne dobije mrvičasto tijesto, a potom dalje mijesiti rukama. Ili rukama izmrviti maslac u brašno, dodati šećer i jaje i umijesiti prhko tijesto
  2. Od tijesta otkidati komadiće i oblikovati ih u lopticu ne veću od oraha. Loptice slagati na papir za pečenje ili na namašćen i pobrašnjen pleh. U sredini svake kuglice utisnuti rupu malim prstom ili drškom kuhače (paziti da se ne probije na drugu stranu!). Premazati bjelanjkom.
  3. Ugrijati pećnicu na 160°C i peći oko 30 minuta u sredini pećnice dok kolačići ne poprime zlatnu boju. Ohladiti. Paziti jer su topli (a i hladni) kolačići vrlo prhki!
  4. Rupice napuniti džemom od marelice ili bilo kojim drugim pekmezom, džemom, marmeladom... ili otopljenom čokoladom ili namazom u stilu Nutelle
